Raw cabbage and rice as base, protein (3 vegetable/one meat), three toppings (choice of 9) like avocado, onion, peanuts, dried bananas etc, and four dressings. Served in a wrap or a bowl with corn bread slice.
All fresh, local and sustainable.
$7 price point for a hearty serving
Served at a walk up counter with all seating outside on the sidewalk.
Good bluegrass music on the stereo.
location is 300 sq ft and concept is intended to fit in very small spaces and not require a hood or venting.
