Is it necessary to illustrate all of the designs you require or would you be content with 2-3 to decide the winner and then have the winner design the remaining illustrations?

No it is not necessary to illustrate all of the images.  Like you said we are looking for 1 or 2 to be illustrated and then once we pick the winner they will design the remaining illustrations.
