Catalogue Design Brief

I am looking for a recipe booklet with around 40 pages including cover. I am providing all the copy and images and the logo. The book will either be spiral bound or stapled. I will let you know what format of file I need for the printer, once we finalized the design. Size wise I am looking for 8.5x11.
I attached the logo, a sample picture of one of the sandwiches, picture of the store front, and the menu we used to have at the deli. Some of the recipes have no pictures.
I attached a couple of files that I had already worked on with some copy. Please don't feel like you need to go by the design that I have there. I am looking for new ideas, something better. Once we decide to work together, I will provide all the copy and images.
