Menu Design Brief

Redesign a menu for a mid-size Italian Restaurant & Pizzeria. Has a bar, gaming and home town cooking. Has been in the city of Salem, Oregon for 40 years, purchased about 18 months ago by a new owner and then damaged by a fire mid-March. The owners are dedicated to their community and employees and the most lovely people. They were in the process of updating the menu anyway, but now want to accelerate for the grand re-opening on 4/22.

Our Italian Kitchen and Pizzeria has been in business for 40 years, serving the hometown community of Salem, Oregon. We purchased it from a family member 18 months ago. We are deep into our community and committed to make Geppetto's the comfortable, gathering spot with authentic Italian cuisine and to be loved by all ages. We have been closed for a month due to a fire in an adjacent store. This has been devastating and at the same time an opportunity to make some upgrades and re-brand and reopen in alignment with our mission, included here: Geppetto's is a home grown “Italian kitchen”, striving to be Salem’s favorite neighborhood eatery and gathering place.With dedication to our community, we prepare and serve our customers’ favorite dishes, from ma’s own pasta recipes to hand tossed pizzas and authentic Italian desserts. We create an experience that will make our guests feel at home and our community stronger. We run a healthy, growing business to serve the interests of our employees, community and owners.

Target Market(s)

Suburban, middle class customers, many of whom have been patrons for 20-25 years. Mid-priced, home cooked Italian food and pizza. Aiming to attract new customer base, including dine in, take out and catering.
