Logo Design Brief

I have included a picture of a sign that has been up for 30 years, but I don't have a logo file. Ignore the shadows over it. Try to match it as close as you can. The font used is similar to Paganini Open.

In addition, can you create a more horizontal version of the logo with both lines of text on the same line? I would like to have a stacked vertical and horizontal logo depending on the purpose.
